One of the tastiest and rarest food to find here in southern part of Thailand, unless you cook at home, is fried fish with fresh turmeric and yellow curry. Although it’s rare to find this dish, it’s actually not difficult to cook at home. You can use any kind of fish but the best fish for this dish is Sai Fish (ปลาทราย).
To prepare Pla Tod you need fresh turmeric, yellow curry powder, pepper, garlic and shrimp paste and a pinchful of salt. You mix those ingredients in a mortar and leave the paste be for 20 minutes before you fry with oil in the pan. You can top it up with fried onion and fried garlic and serve with spicy chili sauce.
